Ingredients
Cage free eggs : 2
Whole wheat flour :1 cup
2% milk: 2 cups
Vanilla extract : 1 tsp
Canola oil : 1 tbsp
Sugar : 1 tbsp
Salt 1/4 tsp
Oil spray for frying ( I use avocado oil)
Sliced mixed berries and bananas
Steps
Mix the ingredients well( except the fruits and oil spray), preferably in a blender.
Heat a skillet well ( pro-tip: ensure it is very hot, use an cast iron skillet if possible).
Pour 3/4 ladles of the batter( more if needed, depending on size of skillet), spread evenly by tilting the skillet around.
Cook for about 1-2 minutes or till the edges are cooked. Flip and cook the other side.
Serve with fruits and enjoy! Skip the powdered sugar on top.
